The short answer is no, you cannot replay missions in Assassin’s Creed Valhalla while you’re in the middle of a playthrough. You’re not able to head back to the location you started it to try it again, and there’s no way to do it through the menu system.
The feature has been in previous Assassin’s Creed games, when you’d have Animus specific objectives to complete, and it’s something you often see in expansive RPGs, but it’s not something that Ubisoft has chosen to include in Valhalla.
