The mushrooms can be found at the bases of trees in the Nature’s Pantry area of the Obsidian Fieldlands. They’re pretty hard to spot, but keep an eye out for tiny brown-ish mushrooms like the one in the photo below.

Buying Springy Mushrooms
You can actually just buy the mushrooms from Anvin, the man in front of the crafting station in Jubilife Village. He’s located near Simona’s stall and the training area that’s found next to Galaxy Team headquarters.
Speak to him and choose the option to buy crafting materials. He’ll sell Springy Mushrooms for 200 Pokedollars each, which is a reasonable price when the alternative is a scavenger hunt in an open field.
